While dreaming up new combinations of green smoothies, I thought cucumber and raspberry would be light and refreshing. Indeed, it’s another new favorite. The tanginess of the raspberries is balanced by the bananas, while the distinct, melon-like flavor of the cucumber shines through, as I hoped it would. A smashing start to the day!
Raspberry-Cucumber Green Smoothie
- Yield: 6 cups
- 1¼ cup apple juice
- 3 handfuls baby spinach
- 1 cucumber
- juice of one lemon
- 2 bananas
- 2 cups frozen raspberries
The order of blending doesn’t really matter so much as that everything is blended well!
- Blend the apple juice and spinach.
- Add the cucumber and lemon juice and blend.
- Add the bananas and raspberries and blend well. Enjoy!
